Sodium Nitrate
Saw a story on CNN yesterday morning about sodium nitrate in processed meat served in school cafeterias and how it may or may not increase chances for cancer in children. The piece was replete with testimonies from "some experts" decrying the food processes and the shifty meat industry representative saying that "those experts" are wrong. It might be true and it might not. Culture of fear, right? All I know is that bad food has been served in school cafeterias, at least, my whole life and I'm not aware of any spiked increase in cancer cases among US K-12 students. It's the "back-to-school-slow-newsweek" equivalent of cell phones causing cancer and government-subsidized farmers pushing genetically modified produce and foods on us. It might happen and it might not but until someone's willing to do more than posit theories on the news, nothing will change.
